How can I help my elderly dog perform his toilet more easily?

My lurcher is almost 16 years old and has arthritis in his back legs. When he squats to do his "number 2s" his legs wobble. What can I feed him so that he can perform quickly and easily? He is not constipated at all and has no dietary problems. However he is quite a fussy eater! I should add as well that he doesn't have many teeth left...
